Ingredients

  • 3 large eggs
  • 1 1/4 cups half-and-half
  • 2 tablespoons honey
  • 2 teaspoons apple pie spice
  • 1 teaspoon vanilla extract
  • 16 slices whole grain French bread
  • 1 tablespoon unsalted butter, melted
  • 1 cup Daisy Cottage Cheese, room temperature
  • 1 1/2 cups mixed fresh berries
  • 1 tablespoon powdered sugar

Directions

Whisk the eggs in a large bowl until frothy; whisk in the half-and-half, 2 tablespoons honey, apple pie spice and vanilla extract. Dip the bread into the egg mixture, soaking bread thoroughly; place on large plate. Heat a large griddle or nonstick skillet over medium heat until hot. Brush with the melted butter; cook the bread for 3 to 5 minutes or until golden brown, turning once. To serve, place one slice of French toast on a plate. Top with the cottage cheese, berries and a second slice of French toast. Sprinkle each serving with powdered sugar. Drizzle with honey or syrup if desired.
